Easy Spinach Pancakes With Oat Flour (Gluten Free)

The season has started – behind the house we have a whole greenhouse of young spinach, and you can also find it at local markets. 😃✨

My child loves to eat pancakes of all kinds – but not the classic thin and big pancakes, but these small and thick ones. That’s where oat flour comes in play because it changes the texture of these spinach pancakes, making them easier to chew (and digest!) compared to many other types of flour you can use. 😋

They are ideal for his handle and he always eats two or three per meal. We usually eat them either for breakfast or for lunch, but they are also great for dinner. They do not fall hard on the small stomach. 😋

But, of course, these are not only pancakes for our little ones, but also for us big ones. It depends on the mood, sometimes I eat them together with Noah along the way, and sometimes, as I agreed to paint today, I eat them with some dip or spread, vegetables and boiled eggs. I make a real nutritious meal that I eat with my fork instead of my hand.✨

Spinach Pancakes With Oat Flour Ingredients

Making spinach pancakes is always an excellent idea because of how nutritious they are, and using oat flour instead of the regular flour can only be a good thing since oat flour is gluten free.

I hope you try this recipe, especially since the ingredients are not complicated and are quick to prepare. I prepared them this time with my Kenwood Chef mixer which has a blender attachment – so I just put all the ingredients inside and blended.
